A Journey Across the North Sea (Part 4)

A four-course matinee from all directions, featuring North Sea fish from head to tail. Expect oysters, common sole, langoustines and Dutch razor clams, sourced through the Woord family. VRR, led by Sander Overeinder, Jurre Blauw and Jesse Burkunk (Wat Schaft de Podcast), apply a range of techniques such as curing in acid, poaching and grilling. Combined with classics like Sauce Picasso, presented in a new interpretation.

At VRR we cook with authentic, flavourful ingredients sourced from local producers small enough to follow their own principles. Seasonal vegetables are mainly organic and come from the Beemster; North Sea fish is supplied by small day boats, and all our meat is sourced exclusively from the Netherlands.

VRR shares the building with Stadsbakkerij As, an artisan bakery that still bakes according to baker Eef's original recipe for Amsterdam restaurants and locals. The bakery shop offers sourdough and everything that pairs well with bread. Open from Tuesday to Saturday (9:00 am – 3:00 pm).
